About the author

Aglaée Jacob is a registered dietitian and has completed a Bachelor's and a Master's degree in Nutrition at Laval University (Quebec City, Canada). She worked as a diabetes educator in Ottawa for 3 years and then left to explore the world. After traveling in South America to master her Spanish skills and do nutrition volunteering on the Galápagos Islands, she lived for a year in Melbourne, Australia and another year in München, Germany. Her personal health struggles made her discover low-carb and Paleo diets in 2010. She is now studying naturopathic medicine at CCNM (Canadian College of Naturopathic Medicine) in Toronto. She is a member of the Weston A. Price Foundation, the Paleo Physician Network, Primal Docs, the Paleo Foundation and a featured expert on the Ancestral Weight Loss Registry. Aglaée is a regular contributor to Paleo Magazine and Today's Dietician. Aglaée operates her own private practice as a Paleo dietitian to practice the way she believes is best, combining the biochemistry and science learned at university and her more recent personal research and nutritional practice about what foods are optimal for human health. Since 2010 she has invested countless hours and a significant amount of capital in training, workshops, books and scientific articles to find real answers about nutrition and re-educate herself as a Paleo RD.
